Green shell mussels with seasonal herb butter sauce

You can prepare mussels in a lot of different ways like with a fresh tomato sauce, creamy butter sauce enriched with different herbs - we used seasonal wild garlic, grilled or - if really fresh, you can eat them even raw. But for me at least, no matter the sauce or how you prepare them, two things are certain.

Use some nice quality mussels, a lot of quality wine & don't overcook.
